BAKED SPARERIBS, NORTH CAROLINA STYLE
3/4 cup boiling water
1 teaspoon crushed red pepper flakes
3/4 cup oil
1 rack spareribs (3 pounds)
Pour water over red pepper; let stand several minutes; stir in oil.
Place spareribs on broiler-pan rack.
Bake in 375 degree F oven, turning twice and basting frequently with oil mixture, 1 1/2 hours or until well browned and tender.
To serve, with kitchen or poultry shears cut in individual ribs.
Makes 4 servings
