ASIAN-STYLE BRAISED PORK RIBS
4 lbs country-style pork ribs, trimmed of fat in 2-inch pieces
1/2 cup hoisin sauce
1 1/2 cups chicken stock
1/2 cup dry sherry or rice wine
3 tbsp soy sauce
2 tbsp dark Asian sesame oil
2/3 cup chili sauce (such as Heinz) or tomato sauce
3 tbsp chopped ginger
4 cloves garlic
6 green onions, in 1-inch pieces
zest of 2 oranges
3 tbsp brown sugar
2 whole star anise
GARNISHES:
2 green onions, cut in half, thinly sliced lengthwise
zest of 1 orange
sesame seeds
Place ribs in 5 1/2-quart Dutch oven. Combine remaining ingredients. Pour over ribs.
Bing to boil, reduce to simmer. Cook, stirring occasionally, until ribs are very tender, 1 1/2 to 2 hours. Do not allow ribs to sink or they will scorch. (Baking at 400 degrees F will prevent this also.
Remove lid during last 15 minutes of cooking to reduce sauce.
Garnish.
