EASY BANANA BREAD
4 large eggs
1 (18.25 oz) package yellow cake mix (without pudding in the mix)
1 (3.4 oz) package instant banana pudding
1 cup water
1/4 cup vegetable oil
3 large bananas, mashed
1/2 cup walnuts or pecans, chopped
Preheat oven to 350 degrees F. Well grease and flour 2 loaf pans.
Beat eggs at medium speed with an electric mixer until thick and pale.
Add cake mix and pudding mix, water and oil, mixing well.
Stir in bananas and walnuts. Pour into prepared loaf pans.
Bake at 350 degrees F for 1 hour or until a wooden pick inserted into the center comes out clean. Cool on wire racks for 10 minutes, remove from pans and cool completely.
Makes two loaves
