Recipe: Baked Zucchini Boats (using ground beef and rice)

BAKED ZUCCHINI BOATS

4 medium-size zucchini
1 yellow onion, chopped
1 garlic clove, chopped
3 cups cooked long grain rice
1 egg, beaten
2 tbsp olive oil
1/2 lb lean ground beef
1/2 cup bread crumbs, divided use
2 cups spaghetti sauce
3 tbsp chopped fresh dill
2 tbsp chopped fresh parsley
2 tbsp grated Parmesan cheese

Cook rice according to package directions.

Split zucchini lengthwise, scoop out seeds.

Saute ground beef, onion, garlic, dill, and parsley in olive oil. Remove from heat. Add cooked rice, beaten egg, 1/4 cup bread crumbs and mix well.

Fill zucchini with the meat mixture and place in a baking dish. Cover with spaghetti sauce, sprinkle cheese and remaining 1/4 cup bread crumbs on top.

Cover and bake at 350 degrees F for approximately 45 minutes, until
zucchini is tender but still firm.

Makes 8 servings
