Recipe: Banana Coconut Bread (using almond flavoring, walnuts and maraschino cherries)

BANANA COCONUT BREAD

2 eggs
1 cup sugar
1/2 cup butter or margarine, melted
1 cup mashed ripe bananas (3 medium)
1/2 teaspoon almond flavoring
1 1/2 cups flour
1/2 cup coconut
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped walnuts
1/2 cup maraschino cherries

Break eggs into a mixing bowl and beat until light and frothy. Add sugar and melted butter; beat well.

Stir in mashed banana and almond flavoring.

Measure remaining ingredients into another bowl and stir until well mixed. Pour over batter and stir just to combine. Place into greased loaf pan.

Bake in 350 degree F oven for 1 hour until toothpick inserted in the center comes out clean. Let stand for 10 minutes. Remove from pan and let cool.
