Recipe(tried): Banana Muffins (with or without using leftover baby food)
Breads - Muffins, Quick BreadsBANANA MUFFINS
1 1/4 cups (10 oz) banana baby food (can use 1/4 cup vegetable oil and either 1 cup (8 oz.) banana baby food or 1 cup (2 medium) very ripe mashed bananas)
1/3 cup (2_1/2 oz) baby formula (can use milk)
1 large egg
2 cups wheat flour (can use white flour or any single grain baby cereal)
1/2 cup packed brown sugar (can use white sugar)
2 tsp. baking powder
1/2 tsp. salt (optional-I did not use)
Preheat oven to 400 degrees F. Grease muffin pan or use paper cups (if not using oil you may need to use a non-stick cooking spray on paper cups to prevent sticking).
Beat together all wet ingredients with a fork, wire whisk, or electric beater. Then add dry ingredients all at once. Mix until flour is moistened. Fill cups 2/3 of the way full with mixture.
Mini muffins: bake for 15-20 minutes (makes 3-4 dozen)
Medium/regular muffins: bake for 20-25 minutes (makes 1-2 dozen)
Large muffins: bake for 25-30 minutes (makes approximately 1 dozen)
I made these muffins with soy baby formula, banana baby food, and wheat flour in mini cups for our 9 mo. old daughter. I also made them with milk, oil, white flour, and mashed very ripe bananas in medium and large cups for the rest of our family. We liked the ones made with banana baby food better (it was sweeter). We froze some of the muffins so they would last longer. Then we microwaved them for a few seconds before serving.
Tips:
-You can take basically any muffin, bread, pancake, cookie, or cake recipe and make it healthier for baby and the rest of the family. Use wheat flour instead of white and don't use any salt. You can use baby food in place of oil (I read that on this web site and it truly works).
- For babies and toddlers use single grain baby cereal in place of flour or oatmeal, use baby formula instead of milk and you can replace some fruits or vegetables with baby food.
- Try adding any fruit or vegetable baby food into pancakes.
- If a recipe calls for prunes try using prune baby food or if it calls for apples try baby applesauce. This can help you to use up leftover baby food.
