BANANA ONE MUFFINS
1 1/4 c. self rising flour
2 or 3 ripe to over ripe bananas
1 c. Fiber One cereal
1 c. raisins
3 tbsp. sugar or Sugar Twin
1/4 c. olive oil
1 egg
1/2 c. milk
In large mixing bowl place 1 cup Fiber One cereal and 1/2 cup milk. Mix in 2 to 3 pureed over ripe bananas and let stand 5 minutes. After 5 minutes, add sugar, raisins and mixture of olive oil and egg. Add flour and mix to even consistency. Bake in greased muffin tins for 20 to 25 minutes at 425 degrees or until tops are lightly brown. When done, loosen from muffin tin and let cool. Makes 9 large or 12 medium muffins. Variation: Add teaspoon cinnamon or add pecans or your favorite nuts.
BANANA MUFFINS
1 1/2 med. bananas, well ripened
1/2 c. granulated sugar
1 egg
1 c. self rising flour
1/2 tsp. baking soda
1/4 c. vegetable oil
1 tbsp. water
Mash bananas. Add sugar, egg, flour and baking soda and mix well. Add vegetable oil and water and mix. Line cupcake baking tray with 12 large liners or 24 miniatures. Add mixture and bake in 375 degree oven for approximately 10 to 12 minutes.
BANANA BREAD MUFFINS
1 stick margarine
2 eggs
1 1/4 c. self-rising flour
1 c. sugar
2 over-ripe bananas
1/2 c. nuts (optional)
Cream butter and sugar, add eggs, then bananas, flour and nuts (may be done in food processor). Bake in cupcake liners at 350 degrees for 12 minutes. Makes 18 muffins or 1 large or 2 small loaves. Bake loaves at 325 degrees.
CINNAMON SPICED BANANA MUFFINS
2 lg. over ripe bananas
1 can (6 oz.) frozen orange juice
concentrate, thawed
2 eggs or 1/2 c. egg substitute
2 c. self rising flour or pancake mix
1/4 c. bran cereal
1 tsp. baking soda
1 tsp. ground cinnamon or apple pie
spice
Pinch salt (optional)
In a large bowl, beat bananas, juice concentrate and eggs together until well blended. Stir dry ingredients together and add to banana mixture. Beat just until blended. Spoon into 16 nonstick muffin cups that have been coated with cooking spray. Fill muffin cups half full. Bake in a preheated 375 degree oven for 15 to 20 minutes.
