Recipe: Barbecue Sauce (20)

BLACK BBQ SAUCE
Juice of 4 sm. limes
6 tbsp. molasses
6 tbsp. oil
2 tbsp. ginger
Pepper, generously
1 c. soy sauce
2 med.-sm. onions
3 cloves garlic
Puree in blender, marinate chicken or pork before grilling.
BBQ SAUCE
1 c. strong black coffee
1 c. Worcestershire sauce
1 c. catsup
1/2 c. brown sugar
3 tbsp. chili powder
2 tbsp. salt
2 c. chopped onion
6 cloves garlic, minced
Combine all and simmer for 25 minutes. Puree in blender a little at a time. Can keep a month or so in the refrigerator.
BBQ SAUCE
2 c. ketchup
3/4 c. Worcestershire sauce
3/4 c. white vinegar
3/4 c. water (rinse ketchup bottle)
2 tsp. garlic powder
1 tsp. pepper
1 tbsp. ground cumin
1 tsp. powdered oregano
2 tsp. salt
1 tsp. cayenne pepper
1 tsp. Liquid Smoke
Mix dry spices in vinegar and stir. Add remaining ingredients and bring to boil. Simmer 30 minutes to desired thickness.
BBQ SAUCE
2 tbsp. butter or margarine
1/2 c. onion, chopped
1/2 c. green pepper, chopped
1 c. catsup or chili sauce
1 c. water
1/2 tbsp. Worcestershire sauce
2 tbsp. brown sugar
1/8 tsp. pepper
1 tsp. chili powder
2 tbsp. lemon juice
1 or 2 tbsp. horseradish, optional
Saute onion in butter, add other ingredients and bring to a boil I boil it about 15 minutes and keep it in the refrigerator for weeks. This is good for chicken, hot dogs, etc.
ZESTY BBQ SAUCE
1 tbsp. butter
1/3 c. minced onions
3/4 c. chili sauce
1/4 c. Kahlua
2 tbsp. packed brown sugar
1 tbsp. Worcestershire sauce
1/4 tsp. salt
4 to 5 dashes Tabasco
In small saucepan, melt butter and saute onions until translucent. Blend in next six ingredients. Simmer 5 minutes stirring several times. Barbeque chicken or ribs over low-to-medium heat coals. Turn frequently, grilling 35 to 40 minutes. During last five minutes brush with sauce. Turn and brush other side.
SAN FRANCISCO BBQ SAUCE
1 c. brown sugar, packed
1 c. catsup
1 1/2 c. pineapple juice
1 c. cider vinegar
2 tbsp. cornstarch
Combine sugar, one cup of juice, catsup, and vinegar. Over moderate heat, bring to a boil, stirring occasionally. Dissolve the cornstarch in remaining juice by shaking in a jar. Blend into the hot sauce. Simmer stirring constantly until sauce thickens and becomes a bit transparent (about 3 minutes).
LOW SALT BBQ SAUCE
12 oz. tomato paste
1/2 c. white wine
1 tbsp. dry mustard (Colemans)
2 tbsp. red wine vinegar
1 tbsp. Worcestershire
Dash Tabasco
1/4 c. brown sugar
1 tbsp. chili powder
1/2 lemon juice
2 tsp. liquid smoke
2 tbsp. minced onion
Simmer 10-15 minutes.
SPICY BBQ SAUCE
3 lb. round steak, 2 inches thick
1 c. ketchup
1/2 c. water
1/4 c. soy sauce
2 tbsp. vinegar
1 tbsp. brown sugar
1 tsp. mustard
1 tsp. horseradish
1 clove garlic
Combine the last 8 ingredients in saucepan. Simmer 10-15 minutes. Prepare steak: moisten steak with water. Sprinkle with meat tenderizer 1 1/2 teaspoons). Pierce with fork several times, both sides. Tenderize overnight or several hours before. Heat up grill. Throw on steak and baste with BBQ sauce several times until steak is done.
TEXAS BBQ SAUCE
2 med. onions, finely diced
1 clove garlic, finely diced
1/4 c. oil
2 tbsp. chili powder
2 c. catsup
1 c. white vinegar
1/2 c. lemon juice
1/4 c. Worcestershire sauce
1/3 c. brown sugar, packed
1 tbsp. prepared mustard
1 tbsp. celery seed, crushed
2 tbsp. butter or margarine
2 tsp. cumin seed, crushed
Saute' onion and garlic in oil for 10 minutes. Stir in chili powder and cook 1 minute. Add all other ingredients EXCEPT for butter, bring to a boil. Lower heat, simmer uncovered for 30 minutes. Stir in butter.
TONY'S BBQ SAUCE
2 (14 oz.) bottles ketchup
1 (12 oz.) bottle chili sauce
1 tbsp. dry mustard
1 1/2 c. brown sugar
2 tbsp. black pepper
1/2 c. wine vinegar
1 c. lemon juice
1/2 c. (5 oz.) A-1 sauce
1/2 tsp. Tabasco sauce
1/4 c. Worcestershire sauce
1 tbsp. soy sauce
1 tbsp. olive oil
1 can beer
1 clove crushed garlic
Mix all ingredients and refrigerate. Makes about 9 cups of sauce.
ORANGE BBQ SAUCE
1/2 c. orange marmalade
1/2 c. orange juice
1 tbsp. curry powder
In saucepan stir together ingredients over low heat until melted. Use on chicken, or shrimp kabobs and BBQ.
JOHN'S BBQ SAUCE FOR CHARCOAL BURGERS
18 oz. Kraft BBQ sauce
1/2 c. mustard
1/2 c. catsup
1/3 c. brown sugar
1/3 c. honey
1/2 c. picante sauce (for spicy) or
1/2 c. dill pickle juice
Mix all ingredients. Spread over patties before charcoaling.
