BEEF FILET
1/2 of Basic Meat Mixture (recipe follows)
FOR THE TOPPING:
1/4 cup ketchup
1 tablespoon brown sugar
1 teaspoon prepared mustard
Form meat into shape of filet, about 1 1/2-inches thick. Place in an 8-inch pie pan.
Bake at 350 degrees F for 45 minutes.
Meanwhile, mix together ketchup, brown sugar and mustard.
At the end of 45 minutes, turn oven off. Spread the ketchup mixture over the filet. Let stay in oven for 10 minutes with door closed.
Makes 2 servings
BASIC MEAT MIXTURE
1 pound lean ground beef
1 slice whole wheat bread
1/4 cup very hot milk
1 egg
1 teaspoon seasoned salt
1/8 teaspoon ground pepper or red pepper sauce
1 teaspoon instant minced, onion
1 tablespoon parsley flakes
Break meat apart into a bowl.
In another bowl soak bread in milk. Add egg, salt, pepper, onion and parsley; blend. Add to meat and toss to mix. Divide in half. (Wrap each half and store in refrigerator for 2-3 days or freeze.)
