Side Dishes - Rice, GrainsOver the years I have completed eliminated the butter and cut way way down on the oil and it's still exceptional. I have some leftovers in the refrigerator right now as a matter of fact! It's a great, easy way to make risotto. Sometimes I add a bit of lemon zest or some sauted mushrooms near the end of the cooking time. I often replace the onions with chopped shallots. Very yummy.
