Recipe(tried): Basic Recipe for Impossible Pie and Impossible Greek Spinach Pie

Impossible Pies! The variations are endless and I've been rolling and freezing wedges of them in tortillas for on-the-run burritos, etc. These require as little or much prep as you want and can pack a wallop of nutrition with good ingredients, too.

BASIC RECIPE FOR IMPOSSIBLE PIE

I've looked at dozens and dozens of recipes and, for a 9-inch pie plate, you basically use this mixture as the batter:

1 cup milk
1/2 cup Bisquick
2 eggs
1/4 tsp. salt

OR:

1 1/2 cups milk
3/4 cup Bisquick
3 eggs
1/2 tsp. salt
Flavorings/seasoning (as you wish)

Mix using a blender.
Pour it into a greased 9-inch pie plate over whatever you like:
cooked ground meat or cooked diced chicken or turkey, cooked vegetables, grated cheese, etc. or combination.
Bake it at 350 degrees F for 35-45 minutes until set to the touch and a bit golden.

I really like this very much. Here's my current favorite (originally posted by Betsy in the chat Bisquick collection with some notes from me .. I've been making a different one nearly each day for a week:

IMPOSSIBLE GREEK SPINACH PIE
GOOD! Smells wonderful :)))

1/2 cup green onions, chopped (Janet: used 2 small onions cuz it's what I had)
1 tbsp Butter
1 (10 oz.) pkg. chopped spinach, thawed and drained (J: add sauteed mushrooms)
1 cup cottage cheese (J: can use less)
1 cup milk
1/2 cup Bisquick baking mix
3 eggs (Janet: I used 2 .. very much filled the 9-inch glass pie plate)
1 tsp lemon juice
1/4 tsp ground black pepper (J: really needs salt even with parmesan!! say 1/4 tsp.)
3 tbsp grated Parmesan cheese (Janet: or feta, if you have it)
1/4 tsp ground nutmeg
(maybe a bit of oregano? didn't use it but am thinking about it)
(J: maybe add olives (easy on salt, if so)? Kalamata .. mmmm)

Cook onions in butter; mix in spinach.

In greased 9-inch pie dish layer spinach and cottage cheese. Put last 7 ingredients in blender and mix well. Pour over casserole.

Bake at 350 degrees F for about 35 minutes, until knife comes out clean.

Makes 4 servings
