Recipe: Baked Eggs and Grits (Quaker Oats, 1973)
Breakfast and BrunchBAKED EGGS AND GRITS
6 hot cooked servings of quick or regular hominy grits
2 tablespoons butter or margarine
6 eggs
6 tablespoons milk
Ground black pepper
Pour grits into ungreased shallow baking dish. Using the back of a spoon, make six wells in top of grits. Place one teaspoon butter in each well.
Crack each egg and place one in each well. Pour milk over grits. Sprinkle with pepper.
Bake uncovered in preheated moderate oven (350 degrees F) for 20 to 25 minutes or until eggs are done.
VARIATIONS:
After baking, sprinkle one of these over the eggs:
1. Cooked drained crumbled bacon
2. Grated cheese
3. Cooked ham or sausage
Makes 6 servings
