Hope this isn't too late! I have taken or sent this casserole to many Pot Lucks and Luncheons and there has never been any leftovers. It makes for 10 people. Very tasty and I'm sure you could play a bit with the recipe too. It came from "Company's Coming" by Jean Pare. She is a favorite "everyday" cookbook author.
BEEF CASSEROLE
1 1/2 pounds Ground beef
1 cup onion chopped
1 tablespoon oil
12 oz. Kernel corn drained
10 oz. Condensed cream of chicken soup
10 oz. Condensed cream of mushroom soup
1/4 c. red pepper or pimiento chopped
1 c. Sour cream
3 c. cooked noodles
3/4 teaspoon salt
1/4 teaspoon pepper
1 teaspoon Beef soup powder
1/4 c. Butter or margarine
1 c. Cornflake crumbs
Scramble fry ground beef with onions in the oil. Drain off the fat and discard it. Remove from heat. Stir in corn, chicken and mushroom soups. Add red pepper and sour cream. Mix lightly. Add prepared noodles. Sprinkle salt, pepper and beef powder over the top and stir to combine. Pour into 2 1/2 qt. casserole.
In a small saucepan, melt the butter. Add cornflake crumbs. Stir to moisten evenly. Spread over top of casserole. Bake uncovered at 350 for 35-45 minutes until hot. Serves 10.
