Recipe: Taos Taco Salad (using corn tortillas)

TAOS TACO SALAD

8 medium corn tortillas
vegetable oil spray
1 (15 oz) can black beans, drained and rinsed
1 (10 oz) package frozen corn, cooked and drained
1/4 cup sliced green onions
2 tablespoons chopped fresh cilantro
4 cups shredded lettuce
2 cups chopped tomato
1/2 cup salsa
1 (8 oz) package Shredded Mexican cheese

Heat oven to 400 degrees F.

Lightly spray both sides of each tortilla with non-stick cooking spray. Place on baking sheet and bake 3 minutes on each side or until crisp.

Combine beans, corn, onion, and cilantro; mix lightly.

For each salad, top tortilla with 1/2 cup lettuce, 1/4 cup tomato, 1/4 cup bean mixture, 1 tablespoon salsa, and 1 oz cheese.
