BEET SALAD
1 cup Julienne beets, soaked in vinegar
2 fresh apples, peeled and chopped
1 tablespoon chopped gherkin pickles
1/2 cup mixed fresh fruit (as for fruit salad)
Whipped cream
Mix all ingredients except cream. Place in a shallow dish; cover with 1/8 inch thick layer of whipped cream.
Yield: 4 servings
