Recipe: Cucumber Mousse (using lime Jello)

CUCUMBER MOUSSE

1 (3 oz.) package lime flavor gelatin
1 envelope unflavored gelatin
1 cup boiling water
1/4 cup (1 oz.) crumbled blue cheese
2 cucumbers, peeled, seeded, shredded and well drained
2 tablespoons fresh lime juice
2 teaspoons grated onion
1 teaspoon grated lime peel
1/2 teaspoon salt
1 cup heavy (whipping) cream
1 cup sour cream
FOR SERVING (OPTIONAL):
Lettuce
Cucumber slices
Watercress
Marinated, sliced tomatoes

Dissolve both gelatins in 1 cup boiling water in large mixing bowl. Stir in cheese until fairly well dissolved. Stir in cucumber, lime juice, onion, lime peel and salt. Chill until slightly thickened.

Meanwhile, whip cream until stiff; fold in sour cream; set aside.

Whip thickened cucumber gelatin mixture until fluffy; fold in whipped cream mixture. Pour into oiled 6-cup mold. Chill several hours or overnight until firm.

TO SERVE:
Unmold onto lettuce-lined plate, garnish with cucumber slices and watercress. Serve with marinated, sliced tomatoes.

Makes 6 to 8 servings
