CARROT-PINEAPPLE MOLD
1 cup orange juice, divided use
2 envelopes unflavored gelatin
1/2 lemon, seeded and peeled
1/4 cup sugar
1/4 tsp. salt
1 1/2 cups carrot pieces
1 1/2 cups canned crushed pineapple with syrup
Salad greens (for serving)
Put 1/2 cup cold orange juice in blender with gelatin. Whirl at low speed to soften gelatin.
Bring remaining 1/2 cup orange juice to boil, add to gelatin mixture in blender and whirl at low speed to dissolve. (If gelatin granules cling to container, push down with rubber spatula.)
When gelatin is dissolved, add lemon, sugar and salt and whirl at high speed until smooth.
Add carrot pieces, cover and chop a second or two.
Add pineapple and chop 1 second. Turn into 4-cup mold and chill until firm.
Unmold on greens to serve.
PINEAPPLE ORANGE CARROT MOLD
1 tbsp. unflavored gelatin
1 cup orange juice, divided use
Sweetener to equal 4 tbsp. sugar
1/8 tsp. salt
1 tbsp. lemon juice
4 oz. sliced raw carrots
1 cup crushed pineapple with juice
1/4 tsp. coconut extract (optional)
Sprinkle gelatin over 1/4 cup orange juice in blender.
Heat remaining 3/4 cup orange juice and pour mixture in blender. Blend until smooth.
Add sweetener, salt, lemon juice, and carrots and run at medium speed 60 seconds.
Pour into bowl and add pineapple and coconut extract, if using. Pour into mold and refrigerate until set.
