I have not had the Turkey Legs at Disney so I don't know if these compare but I think they are good. Following Alton Brown's recipe for Turkey Brine I brine for 24 hours. I then wash the brine off and heat a smoker (Big Green Egg is what I used) to 220 degrees with real charcoal chunks. Before I put on the legs I throw in a handful or so of soaked hickory chips. I then smoke the legs until done. If I remember right, it's about 4 hours on my smoker with nice sized legs. I have injected with a brine in the past but I find it can get a little too salty for more tastes that way. The turkey comes out with a nice "hammy" texture.
Brine:
1 cup kosher salt
1/2 cup brown sugar
2 tablespoons peppercorns
1/2 tablespoon allspice berries
1 gallon vegetable stock, chicken stock or water and use a chicken base
1 gallon ice water
Heat 1 gallon of water to boil to dissolve the salt sugar and base if using. Allow to cool to room temperature. Add to your brine pot along with 1 gallon of ice water and brine for 24 hours.
