Recipe(tried): Benedictine Spread
Misc. 1 Cucumber, peeled
8 oz cream cheese, softened
1/2 cup onion, grated
1/8 tsp salt
1/8 tsp pepper
1/8 tsp green food coloring
In food processor, chop peeled, seeded, cucumber;
drain well, squeezinng out all juice. In a bowl combine the pulp with softened cream cheese, grated onion, salt, pepper and green food coloring. Can be spread on rye bread, crackers, etc.
My mother made this numerous times when I was growing
up and I just recently found a recipe. You have probably found the recipe by now.
