GRILLED BREAD WITH GARLIC-CILANTRO BUTTER
1 loaf supermarket bakery-style French bread, about 20 inches long (do not use a baguette)
8 tablespoons (1 stick) unsalted butter, at room temperature
4 cloves garlic, minced
1/2 cup minced fresh cilantro
Salt and freshly ground black pepper to taste
Slice bread sharply on the diagonal 3/4-inch thick.
Using a whisk, cream the butter in a mixing bowl. Add the garlic and cilantro and season with salt and pepper to taste.
Set up the grill for direct grilling and preheat to medium-high.
When ready to cook, generously brush or spread the bread slices on both sides with the cilantro butter. Arrange bread slices on the hot grate and grill, turning with tongs, as needed, until nicely browned, 2 to 4 minutes per side. Don't take your eyes off the grill for a second because grilled bread burns easily. Transfer bread to a basket and serve at once.
Makes 20 to 24 slices.
