Recipe: Phyl's Zucchini Pancakes (using biscuit mix, 1980's)

Side Dishes - Vegetables
PHYL'S PANCAKES

1/3 cup biscuit mix
1/4 cup grated Parmesan cheese
Dash of pepper
2 eggs, lightly beaten
2 cups grated zucchini
sour cream (optional, for serving)

Combine biscuit mix, Parmesan cheese, pepper and eggs. Fold in grated zucchini.

Use 2 tablespoons of batter for each round pancake and fry them on a greased skillet over medium heat. Flip when golden brown, about 5 minutes on each side.

Serve plain or with sour cream.
