Recipe: Big Bowl Antipasto Salad (using turkey, salami, roasted peppers, olives, cherry tomatoes)

"Some of us might be intimidated by the thought of making an antipasto platter, 'cause we think it takes lots of work and it has to be just so. Not this one! There's no layering or rolling needed. Just toss it all in a big bowl, give it a mix, and it's ready to serve."
1 large head iceberg lettuce, coarsely chopped
One 1/2-inch-thick slice (about 1/2 pound) deli turkey breast, cut into cubes
Two 1/2-inch-thick slices (about 1/2 pound total) deli hard salami, cut into cubes
1 (6 ounce) can pitted black olives, drained
1 (7 ounce) jar roasted peppers, drained and cut into 1/2-inch strips
1 pint cherry tomatoes
1 (8 ounce) bottle Italian dressing
GARNISHES (optional):
Peperoncini
Freshly grated Parmesan cheese
In a large bowl, combine all the ingredients except the dressing; mix well.
Add the dressing and toss until well coated. If desired, top the salad with peperoncini and freshly grated Parmesan cheese. Serve immediately.
Makes 8 to 10 servings
