Recipe: Coconut Chocolate Bars

COCONUT CHOCOLATE BARS

3 eggs
1 cup sugar
1/2 stick (1/4 cup) margarine (room temperature)
2 cups semi-sweet chocolate chips, divided use
1 cup pecan halves
1 cup flaked coconut
1/2 cup all-purpose flour
2 Tbsp. unsweetened cocoa powder
1 tsp. vanilla

Preheat oven to 350 degrees F. Butter 8-inch square pan.

Using electric mixer, beat eggs until foamy. Add sugar and beat until fluffy. Beat in margarine until blended. Stir in 1 cup chips, pecans, coconut, flour, cocoa powder and vanilla. Pour into pan.

Bake until just set but still very moist, approximately 20 minutes.

Pour remaining chocolate chips over and let stand until softened, 2 to 3 minutes. Use knife to spread the softened chocolate chips over bars. Cut into bars while still warm.

Makes 16 bars
