Recipe: Blender Waffles (6)
Breakfast and BrunchCRISPY WAFFLES
2 egg yolks
1 1/4 c. milk
1/3 c. cooking oil
3 tbsp. sugar
1 tsp. salt
1 1/2 c. sifted flour
2 tsp. baking powder
2 egg whites, stiffly beaten (do not
use blender)
In a blender, combine first 5 ingredients; mix well 2-3 seconds. Add flour and baking powder; blend 8-10 seconds. Do not overbeat. Pour into mixing bowl; fold in beaten egg whites. Pour as needed into preheated waffle iron. Bake makes 3 squares 9 inch waffles.
BELGAIN WAFFLES
6 eggs
1 c. cottage cheese
1/2 c. flour
1/4 c. oil
1/4 c. milk
1 tsp. vanilla
1/2 tsp. salt
Blend, scrape sides of blender with spatula. Batter keeps in refrigerator well. Cool waffles, freeze well. Makes 4 to 6 inch Belgain waffles.
BLENDER PANCAKES OR WAFFLES
1 c. creamed cottage cheese
1/2 c. sifted flour
1/4 c. milk
1/2 tsp. vanilla
6 eggs
1/4 tsp. salt
1/4 c. oil
Put all ingredients in a blender, blend on high for one minute, stopping to stir once. Bake on griddle or waffle iron. Waffles can be baked, frozen and reheated in toaster if desired.
EASY WAFFLES
2 eggs
3/4 c. vegetable oil
2 eggs
1 1/2 tbsp. sugar
3/4 tsp. salt
4 tsp. baking powder
2 1/4 c. flour
Mix in order given, beating well. (May be mixed in blender, but do not over mix.) Bake in hot waffle iron. Freeze leftovers by placing in zip lock bag, separated by wax paper. Reheat in toaster.
EXCELLENT WAFFLES
3 c. sifted flour (2 c. for 2 people)
3-1/2 tsp. baking powder (2 1/2 tsp.
for 2 people)
3 egg yolks, well beaten (2 yolks for
2 people)
3/4 tsp. salt (1/2 tsp. for 2 people)
3/4 c. shortening (1/2 c. for 2
people)
2 c. milk (1-1/3 c. for 2 people)
Sift together flour, salt and baking powder. Cut in shortening with wire blender. Combine egg yolks with milk and add to flour mixture. With mixer on medium speed, beat until smooth. Fold in stiffly beaten egg whites. Bake in hot waffle iron until brown and crisp. Makes 6 in a round waffle iron. Serve with hot syrup.
HIGH PROTEIN PANCAKES OR WAFFLES
1 c. cream style cottage cheese
4 eggs
1/2 c. flour
1/4 tsp. salt
1/4 c. oil
1/2 c. milk
1/2 tsp. vanilla
Combine in a blender: Whirl at high speed for 1 minute. Bake on lightly greased griddle or waffle iron. Serves 3 as main dish. Option: Beat well with mixer or rotary beater instead of in blender.
