Recipe: Blueberry Vinaigrette, Our Favorite Vinaigrette for Kathleen, Ohio

Hi Kathleen :-) These two recipes are from The Silver Palate Cookbook and are listed as Vinaigrettes for Asparagas. I have not tried the Bluebarry Vinaigrette. I have often used the "Our Favorite Vinaigrette" for salads other than asparagas.

Blueberry Vinaigrette

1/3 c. olive oil
1/2 c. blueberry vinegar with blueberries
3/4 tsp. salt
3/4 tsp. freshly ground black pepper
1-inch cinnamon stick
1/4 c. fresh blueberries, or unsweetened frozen,
thawed

Combine all ingredients in a jar. Shake well. Make at least one hour before using. Shake again before serving. Makes 1 cup

Our Favorite Vinaigrette

1 Tbl. prepared Dijon-style mustard
4 Tbl. red wine vinegar
1 tsp. granulated sugar
1/2 tsp. salt
1/2 tsp. freshly ground black pepper
minced parsley or snipped fresh chives to taste
1/2 c. extra virgin olive oil

Measure mustard into a bowl. Whisk in vinegar, sugar, salt, pepper and herbs to taste.

Continue to whisk mixture while slowly dribbling in olive oil until mizture thickens. Adjust seasoning to taste.. Cover until ready to use. If necessary, whisk again before serving. Makes 1 cup.
