Recipe(tried): Boiled Potato Dumplings

Hi: Have been exchanging dumpling recipes and saw your request. This is what I Have: 3.5 to 4 lbs. potatoes, cooked in skin, peeled and mashed. 2 eggs, 2 cups flour 1 tbs salt. Mix ingredients well until flour is absorbed. If potatoes are very moist possibly more flour will be needed. Remove dough to a floured bread board and roll out. Cut into dupling sie. Makes around 15. In a large kettle bring water and l/2 tea salt to a boil. Drop pieces into water nd boil for 8 minutes.

Boiled Potato Dumplings

6-8 Medium size potatoes
l/2 cup milk
1/4 cup farina
salt
1 egg
flour

Boil potatoes - mash- add milk, eggs, farina and salt. Mix well. Add enough flour to make stiff dough. Shape into pieces size of golf ball. Drop into boiling water and cook about 15 minutes.
