BRATS WITH SAUERKRAUT RELISH
*Buy fully cooked bratwurst that only need to be heated through in case diners are too impatient to cook them completely.
1/4 cup sugar
1/2 teaspoon prepared mustard
1/4 cup vinegar
1/8 teaspoon garlic powder
1/8 teaspoon pepper
1 (8 ounce) can sauerkraut, drained
1/4 cup chopped green or red sweet pepper
1/4 cup cucumber
1/4 cup chopped onion
8 cooked bratwurst*
8 hoagie buns
For relish, combine sugar and mustard in a bowl. Stir in vinegar, garlic powder, and pepper. Stir in sauerkraut, sweet pepper, cucumber, and onion. Transfer to a container; cover and chill at least 2 hours or up to 2 days.
Transport relish and packaged brats in an insulated cooler with ice packs.
Grill brats or cook on sticks over an open fire till hot. Open buns and grill to toast, if desired.
Place each brat in a bun. Spoon about 1/4 cup relish on each brat.
Makes 8 servings
