Recipe: Apple Pork Curry (crockpot)

Apple Pork Curry

2 lb lean pork, cut into 1/2-inch cubes
1 apple, peeled and chopped
1 small onion, chopped
1 clove garlic, crushed
1 tsp concentrated chicken broth
1 tbsp curry powder
1/8 tsp cinnamon
2 tsp ground ginger
1/2 tsp salt
1/2 cup orange juice

In slow cooker, combine the above ingredients.

Cover and cook on low 5 or 6 hours or until pork is tender. (I have had to let this cook as long as 11 hours before - still turns out great...). Turn pot on high.

In a measuring cup, combine 2 Tbsp. cornstarch and 2 Tbsp. cold water. Stir into pork mixture. Cover and cook until thick.

Serve over rice and pass around peanuts, coconut, raisins, and chutney as condiments.
