Recipe(tried): Bread Machine and regular Calzones
Pizza/Focaccia CALZONES
1 1/4 cups water
1 teaspoon salt
3 cups bread flour
1 teaspoon dry milk powder
1 1/2 tablespoons white sugar
2 teaspoons active dry yeast
3/4 cup pizza sauce
4 ounces pepperoni sausage, chopped
1 1/4 cups shredded mozzarella cheese
2 tablespoons butter, melted
1 Place water, salt, bread flour, dry milk, sugar, and yeast in the pan of the bread machine in the order suggested by the manufacturer. Select Dough cycle.
2 After cycle ends, roll out dough on a lightly floured surface; shape into a 16 x 10 inch rectangle. Transfer to a lightly greased cookie sheet. In a small bowl, mix together chopped pepperoni and mozzarella. Spoon pizza sauce in a stripe down the center of dough lengthwise; add sausage and cheese filling. Make diagonal cuts 1 1/2 inches apart down each side, cutting within a 1/2 inch of the filling. Criss cross strips over filling, sealing with water. Brush top with melted butter.
3 Bake at 350 degrees F (175 degrees C) for 35 to 45 minutes.

Calzones
1 can (14.5 oz.) Diced Tomatoes in Sauce
1/2 pound (about 14 to 16) frozen, prepared meatballs, thawed and cut into halves
1/4 teaspoon dried basil
2 refrigerated, 9-inch prepared pie crusts
1 cup shredded mozzarella cheese
PREHEAT oven to 425 F.
COMBINE tomatoes, meatball halves and basil in bowl. Place 1 pie crust on an ungreased baking sheet. Top half the crust with half the cheese and half the meatball mixture, leaving 1-inch around edge. Fold crust over; pinch e
BAKE for 20 to 25 minutes or until golden brown. Slice into wedges to serve.
*Additional Notes*
* Frozen bread dough, thawed and rolled flat or refrigerated pizza dough may be used instead of pie crust.
* Do not substitute frozen pie crust.
Prep time: 10 minutes
Cooking time: 20 minutes
Servings: 4 to 6

Here's a recipe for the BIG appetite. This will make 2 LARGE (plate-size) calzones that
are definetly a meal in themselves.
Dough:
Dissolve 1 pk yeast in 1 cup warm water.
Mix
1 TBSP sugar
2 TBSP oil
1 tsp salt
2 3/4 c flour to yeast and water.
Mix together till smooth and place in greased bowl. Knead about 10 minuts and cover for 30 minutes. I cover with clear wrap tightly.
In separate bowl: (this is what I use for a meaty and cheesy calzones. The ingredients are
up to you).
1) Mix 1 small can mushrooms, drained
2) 1/4 green pepper
3) 2 slices of onion
4) 1 jar Ragu (any kind)
5) 1 tsp italian seasoning
6) 1 tsp oregano
7) 1 tsp basil
8) 1/2 tsp garlic salt
9) 4 links of cooked italian sausage
10) pepperoni
Roll out dough approx. 10" circle. Place 1 to 2 cups of sauce mix in center of dough. Add
1/2 cup mozzeralla cheese to sauce in the calzones. Fold over and crimp shut.
Place on greased cookie sheet. Brush with melted butter (after 15 minutes of cooking).
Cook for a total of 25 min at 375 degrees or until golden brown. Cover with remaining
sauce and cheese and enjoy !!!
HINT: this makes an awsome pizza crust as well.
