For new years, I used some left over puff pastry and made little Brie parcels. If you get the pre-rolled frozen puff pastry, it's not much work at all. Anyway. I roasted a head of garlic (seperate it out into cloves, drizzle wiht olive oil, and put in a hot oven for ~20 minutes, just until it starts going soft and making the kitchen smell of roasted garlic. :) and mashed it up (take the skin off) with some oregano and some thyme. Cut the pastry into squares, cut up some brie into rectangular chunks (maybe 1/2 by 3/4-inch square or so- depends how large you want the parcels to be) and put a piece of brie topped with a small spoonful of the garlic mixture on each square of pastry, and the seal the pastry up around the brie. Bake until browned and the brie is melting. (Be careful to seal it up well, or you'll have melted brie all over. :) You could probably make them up, freeze them, and then put them in to bake just before serving without much trouble.
