Recipe: Brinkman all in one smoker instructions

Hi Doug,
I have the Brinkman all in one smoker, but have never used it with charcoal, just with gas.

The instructions for charcoal say, start with 8 to 10 lbs of charcoal, when ready, fill the water pan to 1 inch below top edge with water or marinate, place food on cooking grate in single layer with space between each piece, (you can use both grates), it states, to chech water and charcoal level after 3 to 4 hours of cooking, and add if the level is low.

Depending on how hot your fire is, the approxmate cooking time lists:

Pork/Beef Ribs
full grill, 4 to 6 hours

Chicken
1 to 4 fryers, cut up or split 4 to 5 hours
whole fryers, 5 to 6 hours
5 lb. roaster 6 to 7 hours

Everything listed takes at least 4 hours, and goes up to 12 hours for a 18 lb. Ham or Turkey.
