Recipe: Broccoli with Garlic and Red Pepper

BROCCOLI WITH GARLIC AND RED PEPPER

1/3 cup water
1 tablespoon olive oil
1 pound broccoli florets (stems can be peeled and cut into 1-inch coins)
1/2 teaspoon salt
1 medium garlic clove, minced
1/4 teaspoon hot red pepper flakes (optional)

Bring water, olive oil, broccoli, salt and garlic to boil in Dutch oven or large deep skillet. Cover and cook on medium-high heat until vegetable is brightly colored and just barely tender, about 5 minutes.

Remove lid and continue to cook until liquid evaporates, 1-2 minutes. Saute to intensify flavors, 1-2 minutes longer. Adjust seasoning as needed, adding pepper if you like.
