Recipe: Garlic Spinach

GARLIC SPINACH

3 tablespoons combined olive and canola oil
2 tablespoons sliced garlic (cut in 1/8-inch slivers)
1/4 teaspoon kosher salt
1 Pinch ground white pepper
4 medium bunches fresh spinach, well cleaned, stems removed

Heat large saute pan over medium heat. When hot, add oil, garlic, salt and pepper. Saute garlic until light brown, 1 to 2 minutes.

Remove pan from heat and add spinach leaves. Return to heat and toss with a pair of tongs to wilt evenly. When spinach is completely wilted, remove from pan and place in colander to drain slightly. Serve.
