Recipe: Broiled Portabella Mushrooms

BROILED PORTABELLA MUSHROOMS

2 tablespoons dry white wine
1 tablespoon olive oil
1 1/2 tablespoons balsamic vinegar
Pinch salt
4 large portabella caps
Oregano

Preheat broiler or grill.

Combine wine, oil, vinegar and salt in mixing bowl; whisk together.

Wipe mushrooms clean and arrange, smooth side up, on small foil-lined baking sheet. Brush mushrooms with marinade.

Broil for 4-5 minutes, then turn and broil another 4-5 minutes, until mushrooms are touched by charred spots. Remove from broiler; sprinkle with oregano, if desired.

Serve immediately with crispy mixed salad.

Makes 4 servings.
