Serves/Makes: 6
2 cups brown rice, cooked
3/4 cup skim milk
3/4 cup water
2 tablespoons honey
1 teaspoon vanilla extract
2 teaspoons cinnamon
Preheat oven to 350 degrees F.
Combine all ingredients and pour into a baking dish.
Bake covered for 45 minutes or till set.
CREAMY BROWN RICE PUDDING
Tasty and easy to make, this brown rice pudding offers a twist on the traditional.
3 cups cooked brown rice, warm
1 (12-ounce) can NESTL CARNATION Evaporated Fat Free Milk
3 large egg whites
1 large egg
1/2 cup apple juice
1/3 cup raisins
1/4 cup granulated sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/8 teaspoon ground nutmeg, (optional)
Combine rice, evaporated milk, egg whites, egg, juice, raisins, sugar, cinnamon, vanilla extract and nutmeg in medium saucepan. Cook over medium-low heat, stirring constantly, for 8 to 10 minutes or until thickened. Serve warm.
