IDAHO APPLE PUDDING
1/2 cup sugar
1/4 cup shortening
1 egg
1 cup sifted flour
1 tsp cinnamon
1 tsp baking soda
1/2 tsp nutmeg
1/2 tsp salt
2 cups chopped apples
Cream sugar and shortening until fluffy. Beat in the egg.
Sift flour, cinnamon, baking soda, nutmeg, and salt together in a separate bowl; add to shortening mixture and stir well. Add chopped apples. Batter will be stiff. Pour into a greased loaf pan.
Bake at 350 degrees for 30 minutes, or until golden brown. Serve with the whipped topping. Dee-licious!
WHIPPED TOPPING:
3 oz heavy whipping cream
1 1/2 tsp sugar
1 tsp vanilla
While pudding is still in the oven, whip the cream until not quite stiff. Add the sugar and vanilla. Beat until stiff. Chill.
