BROWN SUGAR POUND CAKE WITH WALNUT GLAZE
FOR THE CAKE:
1 cup plus 2 Tbsp. butter, divided use
1/2 cup shortening
1 pound light brown sugar
1 cup sugar
5 eggs
3 cups sifted flour
1/2 tsp. salt
1 tsp. baking powder
1 cup milk
1 1/2 tsp. vanilla, divided use
1 cup chopped walnuts
FOR THE WALNUT GLAZE:
1 cup sifted confectioners' sugar
6 Tbsp. cream
1/2 cup chopped walnuts
Preheat oven to 350 degrees F. Grease and flour a 10-inch tube pan.
TO PREPARE THE CAKE:
Beat together 1 cup of the butter and shortening; gradually add sugars, creaming until mixture is light and fluffy. Beat in eggs one at a time.
Sift together dry ingredients; add alternately with milk and 1 tsp. vanilla to the creamed mixture. Stir in walnuts. Pour batter into prepared pan.
Bake at 350 degrees 1 hour and 15 minutes, or until done. Cool on rack 10 minutes, then remove from pan. Place on rack over a piece of waxed paper.
TO MAKE THE WALNUT GLAZE:
Cream confectioners' sugar and the remaining 2 Tbsp. butter. Add cream, the remaining 1/2 tsp. vanilla, and 1 walnuts. Blend well.
Pour Walnut Glaze over the hot cake. If icing falls onto the waxed paper, scoop it up and put it back on the cake.
