Recipe: Easy Holiday Fruit Cake (using cake mix) (1950)

EASY HOLIDAY FRUIT CAKE

1 pkg (1 lb 3 oz) white cake mix
1 egg
1/4 cup water
1 tsp salt
1 tsp lemon extract
3 eggs
1/2 cup sifted all purpose flour
1 lb light raisins
1 lb pecans halves
1/2 lb whole candied cherries
1/2 lb candied pineapple, cut into strips

Preheat oven to 275 degrees F. Line two greased 8 1/2 x 4 1/2 x 2 1/2 inch loaf pans with waxed paper; grease paper.

Combine cake mix, egg, water, salt and lemon extract in large bowl of electric mixer. Beat two minutes at medium speed. Add 3 eggs; beat two minutes longer.

Mix flour and remaining ingredients together; stir into cake batter. Pour into the two prepared pans.

Bake at 275 degrees F for about two hours.

Makes 2 loaves
