Recipe: Brownie Muffins

Brownie Muffins

Makes 16 muffins

1 cup all -purpose flour
1 1/4 cups granulated sugar
1/4 tsp. salt
1 Tbsp baking powder
1 cup unsalted butter
4 squares (4 ounces) sweet baking chocolate
4 eggs, lightly beaten
1 tsp. vanilla extract
1 cup chopped pecans

Preheat oven to 400F. Grease 16 (3x1 1/2-inch) muffin cups. In a large bowl, stir together flour, sugar, salt and baking powder. In a small saucepan, melt butter and chocolate over low heat. Stir chocolate mixture into flour mixture. Add eggs and vanilla and whisk just until ingredients are evenly moistened. Fold in pecans. Spoon the batter evenly into prepared cups, filling each one 3/4 full. Bake 20 minutes or until springy to the touch.
