Recipe(tried): Chicken Keiv Roll-ups

Chicken Kiev Roll-ups

1 tbsp. dried parsley
1 tbsp. dried chives
1/2 tsp. garlic powder
6 boneless, skinless chicken breasts,
pounded to 1/4 inch thickness
1/2 tsp. salt
1/2 tsp. pepper
3 tbsp. butter, cut into 6 equal slices
1 tbsp. seasoned bread crumbs
1/8 tsp. paprika

Preheat oven to 350 degrees. Ina small bowl, combine the parsley, chives and garlic powder; set aside.

Sprinkle both sides of each breast lightly with salt and pepper then sprinkle 1 tsp. of the parsley mixture on one side of each chicken breast. Place a slice of butter in the center of each piece of chicken and roll each chicken breast tightly, tucking in the sides as you roll. Place the rolls, seam side down in medium sized muffin tins that have been coated with non-stick cooking spray. Sprinkle 1/2 tsp. of the seasoned bread crumbs and some paprika over each roll. Bake for 25-30 minutes or until no pink remains and the juices run clear. Serve immediately.

***MY VARIATION: After seasoning with salt and pepper, I have placed one slice deli ham and one slice deli swiss on each pounded out breast, rolled up, placed in muffin tins and baked as directed. When done, serve with following sauce recipe over top:
1 (10oz) can condensed cream of chicken soup)
1/3 cup milk
2 tbsp. olive oil
1/2 cup chopped onion
Cook onion in olive oil until light brown, add soup and milk, Heat thouroughly. Serve over chicken cordon bleu roll-ups. ***
