Recipe(tried): Moist Banana Muffins or Quick Bread

Breads - Muffins, Quick Breads
Here is a Banana nut muffin or bread recipe that I use and it is always moist.

MOIST BANANA MUFFINS

1 1/2 cup flour
1 cup sugar
1 tsp. baking soda
1/2 tsp. salt
1 cup mashed banana
2 eggs
1/2 cup oil
1/2 cup sour cream
1 tsp vanilla
chopped nuts*

Preheat oven to 350 degrees F. Grease muffin tins or a loaf pan.

Combine all the dry ingredients. Then stir in the rest. Use low speed on your mixer.

Bake at 350 for 55-65 minutes if bread or about 15-20 minutes if muffins.

*Instead of using nuts in the mixture, I put in mini chocolate chips.

I then frost it with cream cheese frosting, and sprinkle nuts on them. Don't be afraid to use your imagination.
