BUTTER COOKIES (KURABIYE, TURKISH)
8 tbsp unsalted butter, at room temperature
1/2 cup confectioners sugar
3/4 tsp vanilla extract
1 cup inbleached all purpose flour
confectioners sugar for dusting cookies
Prehest oven to 300 degrees F.
Cream the butter, sugar and vanilla until light and fluffy. Add the flour by degrees, working lightly, to form a dough. Pat the dough into a 6 by 7 inch rectangle and cut into about 20 squares.
Place the cookies slightly apart on a cookie sheet and bake 20 minutes.
Coat generously with confectioners sugar while still warm and store in airtight container.
