Recipe: Applesauce Cookies by Utah first lady Nellie Pace Lee (1950's)

2 cups flour
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1 cup finely chopped nut meats*
1 cup chopped seedless raisins
1/2 cup shortening
1 cup sugar
1 teaspoon baking soda
1 cup applesauce
1 egg, well beaten
Sift flour, measure, add salt and spices, sift again and add chopped nut meats and raisins.
Cream shortening, add sugar gradually and continue to beat until light.
Stir baking soda into applesauce, add one well beaten egg; combine with the creamed mixture. Add dry ingredients. Drop by teaspoonfuls 2 or 3 inches apart onto a greased baking sheet.
Bake in a moderate oven, 375 degrees F, for 15 to 20 minutes.
DO NOT OVERBAKE.
*For variation use 1/2 cup of fresh, shredded coconut in place of the 1 cup of chopped nut meats.
Makes about 4 dozen cookies.
