Recipe(tried): Buttermilk Biscuits

So sorry to hear you are all sick...hope you are all well and running about soon!

Here in the states a biscuit is a round little dough, all puffy and flaky, that is slathered with butter and jam. You can find them in the refrigerated section of the local grocers and you pop them in the oven to bake when one is too lazy to make them from scratch.

I do have a very good "from scratch" recipe that I am including so you can try them.

I think a biscuit in England and probably in your neck of the woods is a cookie. Let us know what a biscuit is in New Zealand...

Buttermilk Biscuits
makes 12 biscuits

2 c. flour
1 T. baking powder
3/4 t. salt
1/2 t. baking soda
5 T. chilled solid veg. shortening
1 c. buttermilk

preheat oven to 425. In a large bowl, sift together flour, baking powder, salt and baking soda. Using a pastry blender or 2 knives, cut the shortening into the flour mixture until coarse crumbs appear.

Add the buttermilk tossing with a fork until a dough forms. Turn the dough out onto a lightly floured surface, knead a few times til smooth. Pat the dough into a 3/4-inch thickness and using a biscuit cutter or the rim of a glass dipped in flour, cut out your biscuits, place them 2-inches apart on ungreased cookie sheet. Bake til golden 12-15 mts. Serve hot.
