BUTTERY APPLE SQUARES
2 cups Kellogg's Rice Krispies
1 1/2 cups sifted all-purpose flour
1 tsp. salt
2/3 cup plus 1 tbsp. butter, divided use
1 egg, separated
1/2 cup milk
5 cups sliced, pared apples
3/4 cup sugar
2 tbsp. all-purpose flour
Preheat oven to 375 degrees.
Crush Rice Krispies into fine crumbs. Sift together the 1 1/2 cups flour and salt; mix with crumbs.
Cut in the 2/3 cups butter until mixture resembles coarse corn meal.
Combine egg yolk and milk in a small bowl; mix well. Add to flour mixture and stir ONLY UNTIL COMBINED.
Pat half of the dough in bottom of a greased 9x9x2-inch baking dish. Cover with sliced apples.
Combine sugar and the 2 tablespoons of flour in a small bowl; sprinkle over apples. Dot with the remaining 1 tablespoon of butter.
Roll out remaining dough on a lightly floured surface to fit pan; place over apples. Brush with slightly beaten egg white.
Bake for 45 minutes or until apples are tender. Cut into squares and serve warm or cold.
