2 cans Royal Ann Cherries, drained and pitted
1 (15 oz.) can fruit cocktail, drained
1 can pineapple tid bits, drained, saving 1/2 juice
3/4 cup pecans, chopped
4 egg yolks, beaten
1/4 cup half and half
1/4 cup heavy (whipping) cream
pinch of salt
1 pkg. small Kraft mini marshmallows
1 (12 oz.) container Cool Whip, thawed or fresh whipped cream
Place cherries, fruit cocktail, pineapple, and pecans in a serving bowl.
Add all to double boiler and simmer till thickened.
In a double boiler mix with reserved pineapple juice, egg yolks, half and half, heavy cream, and a pinch of salt,. Cook over low heat stirring constantly until thick and smooth. Cool.
When cooled, add to fruit and nut mixture. Add marshmallows and fold in Cool Whip. Chill for at least 1 hour.
TO MAKE AHEAD OR FREEZE:
Put in refrigerator night before serving. Or freeze and serve frozen as a dessert.
