Recipe Collections
I would keep them very simple. Sometimes sauces or some spices don't warm up well. A roasted chicken or turkey, a roast beef (done to medium or just under) and ham travels very well.

If you insist, you could always whip up a simple sauce on site depending on the site of course.

Potatoes in a dish do not freeze well but I have seen and heard that mashed potato does freeze well. I've seen them available at the grocery store. I don't know of the "rules" for having them freeze well. If you are interested in that, I would put a posting up asking for help with that.

Mind you potato salad is very good and you can make it up a few days in advance. To be safe, I don't think I would go anymore than two days in advance.

Oh and a raw vegetable platter is always great. Heck, baby carrots can be bought ready to eat, grape tomatoes are ready to eat once washed, celery is easy to cut up but I would leave the celery to cut up until the night before as it can rust on you or get slimy, cauliflower, broccoli will stay nice cut up a few days in advance.

Oh, the fixings for sandwiches. A variety of cold cuts, buns, cheese but not cut in advance. Don't forget condiments.
