Recipe: Green Pepper Sofrito

Toppings - Assorted
GREEN PEPPER SOFRITO

3 large green bell peppers, finely chopped
5 thin scallions, trimmed and finely chopped
2 large garlic clove, finely chopped
2 teaspoons olive oil
1/2 teaspoon dried rosemary, crushed
1/2 teaspoon dried thyme, crushed
1/2 cup finely chopped fresh parsley
1/2 cup finely chopped fresh dill (or to taste)
1 grated lime zest
Salt and freshly ground pepper (to taste)

Combine everything in a saucepan, stir well, and bring to a boil over medium heat. Reduce the heat and simmer for 5 minutes. Season with salt and pepper to taste.

Makes 2 cups
