GINGER BARS
1 1/2 cups flour
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup hot water
1/2 cup butter, room temperature
1/2 cup packed light brown sugar
2 large eggs
1/2 cup molasses
Preheat oven to 350 degrees F. Lightly grease a 13x9-inch baking pan.
Combine the flour, spices and salt; set aside.
In a small bowl, dissolve the baking soda in the hot water. Stir in the molasses; set aside.
In a large bowl, cream the butter and brown sugar. Beat in the eggs. Beat in the molasses mixture. Gradually blend in the dry ingredients. Spread the dough evenly in the prepared pan.
Bake 18-20 minutes, or until toothpick inserted in center comes out clean. Let cool before cutting into bars.
