CAMPBELL'S CREAMY RISOTTO
1 (10 3/4 ounce) can Campbell's Healthy Request Condensed Cream of Mushroom Soup
1 1/2 cups Campbell's Healthy Request Ready to Serve Chicken Broth
1 1/2 cups Minute Original Rice, uncooked
1 tablespoon grated Parmesan cheese
Ground black pepper (to taste)
In medium saucepan mix soup and broth. Over medium-high heat, heat to a boil.
Stir in rice and cheese. Cover and remove from heat. Let stand 10 minutes.
Fluff with fork. Serve with freshly ground pepper and additional cheese if desired.
VARIATIONS:
TOMATO-BASIL RISOTTO:
In step 2, add 1 tablespoon chopped fresh basil or 1/4 teaspoon dried basil, crushed, and 1 small tomato, diced (about 1/2 cup) or 1/2 cup drained cut-up canned tomatoes with rice.
CONFETTI RISOTTO:
In step 1 add 1/4 teaspoon dried thyme, crushed, 1/2 cup frozen peas, 1 small carrot, shredded (about 1/3 cup) and 1 small onion, finely chopped (about 1/4 cup) with soup and broth. Proceed with step 2.
Makes 4 servings
